Easy Mozambique Dinner

Hey!
We all have our household favorite meals, and this one is in my home's top five quick fixes, along with Fried Rice, Chicken & Rice, Buffalo Chicken, and Chili!
My boyfriend's mothers family is from the Açores, or "Azores" if you're looking for the American spelling. We love to incorporate Portuguese recipes from his mom and grandmother (Voa) into our home! Of course because of the family heritage, but also because its just SO GOOD!
I won't bore you with having to scroll through 4 pages of chit chat before finding our recipe, so here it goes! Our full recipe, with a vegan option at the end!

Ingredients:
- 1/2-1 Cup vegan butter (we use Earth Balance*)
- 4-6 cloves of garlic (to preference)
- 1 16ox bottle of White Cooking Wine*
- 4 packets os Sazon Goya (be SURE its this one!*)
- 1-3 TBS of hot sauce of your choice, depending on how much heat you're feeling
- Juice of 1 lemon
- heaping pile of parsley...like 1-3 TBS depending on how much you like
- 1 lbs of meat protein ( or frozen veggies for vegan option)
we use peas, whatever beans we might have, broccoli, cauliflower, or a bunch of spinach as some ideas.
- 1 box of GF pasta (we've tried many and this is our favorite!*)
- Crushed red pepper for topping (optional and to preference)
Cooking:
1. pre heat oven to desired temperature (I usually do 350-400) for protein/veggie choice so that your oven foods can cook for about 20 minutes
2. Prep your protein/veggies if desired. For meats, I de-shell/etc if needed and put into a dish deep enough to hold protein in a single layer plus enough space to cover the top of the protein.
for veggies that get roasted, I put on an air fry tray or cookie sheet, coat with salt and pepper, and toss them in the oven
for veggies that don't get roasted (peas/beans/etc) I just cook them as per packaging if needed, otherwise I toss them in at the end to heat up in the sauce.
3. Add butter and garlic to medium pot and cook on medium/low until you can smell that fantastic butter garlic
4. Once butter & garlic are smelling good, add your entire bottle of white wine, all 4 packets of Sazon, hot sauce, lemon juice, and parsley to the pot. Mix it up, and keep mixing until boiling. You will feel the Sazon packet dissolve, make sure that packet is dissolved AND mix is boiling.
5. If using a meat protein, pour enough sauce into protein dish to cover, be sure to leave at least around half of the mix in the original pot. If using shrimp, add cleaned shrimp to pot.
6. Put protein in oven. OR put veggies in oven now
7. Let all proteins cook (meat/veggies in oven or shrimp in pot) while boiling water for pasta.
8. When pasta water boils, add the pasta and let cook. (if you're new to GF pasta...watch it! It does not take as long as regular pasta to cook)
9. When pasta is done, protein/veggies should be done around the same time. Remove from oven.
10. Toss everything together in a bowl (my preference), sprinkle some crushed red peppers on top (if you're into crushed red peppers) and enjoy!
